What recommendations should be taken into account to preserve wine properly?

First of all, it is crucial to consider the right temperature to preserve the wine. Avoiding sharp fluctuations in temperature is fundamental, keeping the wine at a constant range between 53ºF and 59ºF. Extreme variations can expand or contract the cork, allowing air to enter the bottle, which accelerates the process of oxidation and premature ageing of the wine.

Another essential aspect relates to the storage position of the bottles. Generally, it is recommended to place them horizontally to ensure that the cork remains moist, maintains its elasticity and guarantees an airtight seal. However, in the case of sparkling wines, it is preferable to store the bottles in a vertical position to avoid the loss of carbon dioxide gas.

In addition to temperature, the storage environment should maintain a humidity level of around 70%. A very dry environment can dry out the cork, while an excess of humidity can generate mould that negatively affects the aroma of the wine.

Lighting also plays a crucial role. Wine is highly susceptible to light, whether natural or artificial, especially white and rosé wines, which may develop the so-called “light sickness”, generating unpleasant odours. It is therefore recommended to store wine in a dark environment.

It is important to avoid exposing the wine to strong odours, as it can easily absorb them. Finally, the wine must be protected from constant vibrations, which can also affect its quality.

In short, storing wine in the kitchen for long periods is not ideal due to intense odours, temperature changes, vibrations and excessive light. The optimum would be to use an air-conditioned cellar or wine cellar, or to place it in the darkest and coolest area of the house.
